Bhoot Jolokia

While the world knows it as Ghost Pepper, indigenous communities in Assam, Nagaland, and Manipur have cultivated Bhoot Jolokia for centuries. In 2007, it shattered records by measuring over 1 million Scoville Heat Units—more than 400 times hotter than Tabasco sauce. But Bhoot Jolokia is far more than extreme heat. For Northeast Indians, it's woven into daily life: smeared on fences to deter wild elephants, pounded into chutneys, used in traditional medicine, and essential to family recipes passed down through generations. Its heat builds gradually rather than hitting immediately, accompanied by a smoky, fruity character with subtle sweetness and hints of chocolate and citrus that make it far more than just a heat bomb.

Guntur Erra Mirapakaya

Known as the "Chilli Capital of India," Guntur produces 280,000 tonnes of chillies annually, accounting for 32% of India's total production. The prized Guntur Sannam variety received Geographical Indication status in 2010, recognised for its unique characteristics shaped by the region's terroir. These peppers deliver 35,000-40,000 Scoville Heat Units with a complex flavour profile - earthy and robust with fruity notes reminiscent of tomato, hints of citrus, and subtle smokiness. The brilliant red colour and thick skin provide both visual appeal and body, while the balanced pungency creates layers of flavour that don't just burn but build complexity on your palate.
